🥘 Slow Cooker Beef & Cheddar Potato Casserole

🔹 Ingredients:
1 lb ground beef
1 small onion, diced
1 tsp garlic powder (or 2 cloves fresh garlic, minced)
1/2 tsp paprika (optional for a smoky flavor)
Salt & pepper to taste
1 (28–32 oz) bag of frozen shredded hash browns or diced potatoes
1 can (10.5 oz) condensed cream of mushroom soup (or cream of cheddar or cream of potato)
1/2 cup sour cream (adds creaminess)
2 cups shredded sharp cheddar cheese, divided
1/2 cup milk
Chopped green onions or parsley for garnish (optional)
🔹 Instructions:
1. Cook the Beef:
In a skillet over medium heat, cook ground beef and diced onion until beef is browned and onions are soft. Drain excess grease.
Season with garlic powder, paprika, salt, and pepper.
2. Mix the Casserole Base:
In a large bowl, combine:
Frozen potatoes
Cooked beef mixture
Cream of mushroom soup
Sour cream
Milk
1 1/2 cups shredded cheddar cheese
3. Add to the Slow Cooker:
Lightly grease the slow cooker insert.
Pour in the potato-beef mixture and spread evenly.
Cover and cook on LOW for 4–6 hours or until potatoes are tender and heated through.
(If using diced frozen potatoes, it may take closer to 6 hours.)
4. Finish with Cheese:
About 15 minutes before serving, sprinkle the remaining 1/2 cup of cheddar over the top and cover again until melted.
