Mediterranean Avocado Toast Plate

You’ll need
2 thick slices sourdough
1 ripe avocado
2 jammy eggs
2–3 oz feta, crumbled
1 cup cherry tomatoes, halved
1 cup sliced cucumber
½–1 cup mixed olives
2 tbsp olive oil, 1 tbsp lemon juice
Parsley (or dill), salt, pepper, pinch za’atar/sumac (optional)
Steps
Eggs: Boil 7 minutes for jammy centers; ice-bath, peel, halve.
Toast: Mash avocado with lemon, salt & pepper; spread on toasted bread and top with feta.
Tomato–cuke: Toss tomatoes & cucumbers with 1 tbsp olive oil, pinch salt/pepper.
Plate: Add toasts, eggs, olives; drizzle remaining olive oil.
Finish: Sprinkle parsley and za’atar/sumac. Serve immediately.
