No Bake Pumpkin Pie Cheesecake Bites Granola Shell
Ingredients:
- 1 1/2 cups granola
- 1/4 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup canned pumpkin puree
- 1/4 cup powdered sugar
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons granulated sugar
Directions:
1. In a medium bowl, mix granola with melted butter until well combined.
2. Press the granola mixture firmly into the bottom of mini muffin tins or silicone molds to form shells. Place in refrigerator to set while preparing filling.
3. In a large bowl, beat the softened cream cheese until smooth and creamy.
4. Add pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract to the cream cheese. Mix until fully combined.
5. In a separate bowl, whip the heavy cream with granulated sugar until stiff peaks form.
6. Gently fold the whipped cream into the pumpkin mixture until no streaks remain.
7. Spoon the cheesecake filling into the prepared granola shells, smoothing the tops.
8. Refrigerate for at least 3 hours or until firm before serving.
