🥑🥚 Avocado & Egg Power Salad
Ingredients:
2 boiled eggs (halved)
1 ripe avocado (diced)
1 cup fresh spinach leaves
1 cucumber (sliced)
1 red onion (thinly sliced)
2 medium tomatoes (sliced)
Fresh parsley (chopped)
Pinch of chili flakes, salt, and black pepper
Dressing:
2 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
Salt & pepper
Instructions:
Arrange spinach as a base in a bowl.
Layer cucumber, tomatoes, red onion, avocado, and boiled eggs on top.
Sprinkle with parsley, chili flakes, salt, and pepper.
Whisk dressing ingredients and drizzle over the salad.
