Easy Snowballs

Ingredients:

- 4 large eggs
- 1½ cups sugar
- 1 tablespoon vanilla essence
- 1 cup oil
- 2½ cups cake flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- 1 cup milk

Syrup Ingredients:
- 1½ cups sugar
- 1½ cups water
- 2 teaspoons red food colour
- 2-3 cups desiccated coconut

Icing for Joining:
- 1 cup icing sugar (sifted)
- 1-2 tablespoons hot water

Directions:

1. Preheat the oven to 350°F (175°C). Grease and flour your baking tray.
2. In a large bowl, beat the eggs and sugar together until light and fluffy.
3. Add the vanilla essence and oil, mixing well.
4. In a separate bowl, sift together cake flour, baking powder, and salt.
5. Gradually add the dry ingredients to the egg mixture alternately with the milk, beginning and ending with the dry ingredients. Mix until smooth.
6. Pour the batter into the prepared baking tray and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
7. While the cake is baking, prepare the syrup by combining sugar, water, and red food colour in a saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and set aside.
8. Once the cake has cooled, cut it into small squares or rounds.
9. For the icing, mix sifted icing sugar with hot water to form a thick but spreadable consistency.
10. Dip each cake piece into the syrup briefly, then join two pieces together with the icing.
11. Roll the joined cake pieces in desiccated coconut until fully coated.
12. Refrigerate for at least one hour before serving to allow the icing to set.
