Homemade Ligurian Rabbit Stew Recipe 🇮🇹🍖🍷
A traditional dish from Liguria, this rabbit stew is cooked with white wine, olives, and fresh herbs for a deliciously tender and flavorful meal. 🌿
Ingredients:
• 1 whole rabbit, cut into pieces (2.2 lbs / 1 kg)
• 2 tbsp olive oil (30ml)
• 1 onion, chopped
• 2 garlic cloves, minced
• 1/2 cup white wine (120ml)
• 1/2 cup black olives (75g)
• 2 sprigs rosemary
• 1 bay leaf
• Salt and pepper to taste
Instructions:
Heat olive oil in a pan, add rabbit pieces, and brown on all sides.
Remove rabbit and sauté onion and garlic until soft.
Return rabbit to the pan, pour in white wine, and let it reduce.
Add olives, rosemary, bay leaf, salt, and pepper. Cover and simmer for 45 minutes.
Serve warm with crusty bread or polenta!
