Ingredients:
For the Chicken:
🍗 Chicken thighs or breasts - 1 lb (sliced into strips)
🌿 Greek seasoning - 1 tbsp (or a mix of oregano, paprika, cumin, garlic powder)
🍋 Lemon juice - 2 tbsp
🧄 Garlic - 2 cloves (minced)
🫒 Olive oil - 2 tbsp
🧂 Salt & pepper - to taste
For the Grilled Veggies:
🌶️ Bell peppers - 2 (sliced)
🧅 Onion - 1 (sliced)

For the Tzatziki Sauce:
🥒 Cucumber - 1/4 cup (grated and squeezed dry)
🥄 Greek yogurt - 1 cup
🧄 Garlic - 1 clove (minced)
🌿 Fresh dill - 1 tbsp (chopped)
🍋 Lemon juice - 1 tbsp
🧂 Salt - to taste
For Assembly:
🥙 Pita bread or flatbreads - 4
🥒 Cucumber slices - 1 cup
🍅 Cherry tomatoes - 1/2 cup (halved)
🌿 Fresh parsley - 1 tbsp (chopped, for garnish)
Directions:
Marinate the Chicken: In a bowl, combine chicken strips, Greek seasoning, lemon juice, minced garlic, olive oil, salt, and pepper. Let marinate for at least 15 minutes (or up to 1 hour).
Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken strips for 4-5 minutes per side, until browned and cooked through. Set aside.
Grill the Veggies: Toss bell peppers and onions with olive oil, salt, and pepper. Grill or sauté until tender and slightly charred, about 5-7 minutes.
Make the Tzatziki Sauce: In a bowl, combine grated cucumber, Greek yogurt, minced garlic, lemon juice, dill, and salt. Mix well and chill in the refrigerator until ready to serve.
Assemble the Gyros: Warm the pita bread. Layer each with grilled chicken, veggies, cucumber slices, and cherry tomatoes. Drizzle generously with tzatziki sauce.
Garnish & Serve: Sprinkle with fresh parsley and serve immediately with extra tzatziki on the side.
