Keto Chocolate Chip Blondies
Ingredients
2 cups almond flour
½ cup unsalted butter, melted
¾ cup brown erythritol (or monk fruit brown sweetener)
2 large eggs
1 tsp vanilla extract
½ tsp baking soda
Pinch of salt
½ cup sugar-free chocolate chips (Lily’s or ChocZero)
¼ cup chopped walnuts or pecans (optional for crunch)
Instructions
Preheat oven to 350°F (175°C). Line an 8x8 or 9x9 baking pan with parchment paper.
Mix wet ingredients: In a bowl, whisk melted butter, sweetener, eggs, and vanilla until smooth.
Add dry ingredients: Stir in almond flour, baking soda, and salt until a thick batter forms.
Fold in chocolate chips (and nuts if using).
Spread in pan evenly. Sprinkle a few extra chocolate chips on top for looks.
Bake for 20–25 minutes, until edges are golden and center is set (don’t overbake if you want them gooey!).
Cool completely before slicing into squares or bars.

Can be stored in the fridge for up to 1 week or frozen for later.
For extra flavor: Add ½ tsp cinnamon or a swirl of almond butter before baking.
