🍪 Cookies and Cream Cake Recipe
Rich, creamy, and loaded with Oreo goodness.
Ingredients
For the chocolate cake (3 layers):
• 200g (1 ½ cups) all-purpose flour
• 75g (⅔ cup) unsweetened cocoa powder
• 1 ½ tsp baking powder
• 1 ½ tsp baking soda
• ½ tsp salt
• 250g (1 ¼ cups) granulated sugar
• 100g (½ cup) brown sugar
• 2 large eggs
• 240ml (1 cup) buttermilk (or milk + 1 tbsp vinegar)
• 120ml (½ cup) vegetable oil
• 1 tsp vanilla extract
• 240ml (1 cup) hot coffee or hot water
For the cookies & cream frosting:
• 400g (14 oz) cream cheese, softened
• 200g (1 cup) unsalted butter, room temperature
• 150g (1 ¼ cups) powdered sugar (adjust to taste)
• 1 tsp vanilla extract
• 15–20 Oreo cookies, finely crushed (cream filling included)
Optional for garnish:
• Whole Oreos or mini Oreos
• Chocolate ganache or drip
• Oreo crumbs around the base
Instructions
1 Preheat oven to 175°C (350°F). Grease and line three 8-inch (20 cm) round cake pans.
2 Make the cake batter:In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.In another bowl, whisk together both sugars, eggs, buttermilk, oil, and vanilla.Combine the wet and dry ingredients. Slowly add the hot coffee or water and mix until smooth (batter will be thin – that’s good!).
3 Bake:Divide the batter evenly between the pans. Bake for 22–28 minutes or until a toothpick comes out with a few moist crumbs.Let the cakes cool completely before frosting.
4 Make the frosting:In a large bowl, beat the butter and cream cheese together until smooth and creamy (about 2–3 minutes).Add powdered sugar and vanilla. Mix until fluffy.Fold in the crushed Oreos. You can use more or fewer depending on how “cookies & cream” you like it.
5 Assemble the cake:Place the first cake layer on a serving plate. Spread a generous layer of frosting. Repeat with the next layers.Frost the top and sides of the cake. Use an offset spatula to smooth or go for a rustic look.
6 Decorate:Pipe swirls of frosting on top and add whole or halved Oreos. Dust with extra cookie crumbs or drizzle with ganache if desired.
7 Chill for 30–60 minutes before slicing for best results.
