Pumpkin Pie Crisp Recipe
Ingredients:
- For the Filling:
- 1 can (15 oz) pumpkin puree
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 2 large eggs
- 1 cup heavy cream
- For the Topping:
- 1 cup old-fashioned oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold and cut into small pieces
Directions:
1. Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish.
2. In a large bowl, combine the pumpkin puree, granulated sugar, salt, cinnamon, nutmeg, cloves, ginger, eggs, and heavy cream. Mix until smooth.
3. Pour the pumpkin mixture into the prepared baking dish.
4. In a separate bowl, mix the oats, flour, brown sugar, granulated sugar, salt, and cinnamon. Add the cold butter pieces and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
5. Sprinkle the oat mixture evenly over the pumpkin filling.
6. Bake for 40-45 minutes, or until the filling is set and the topping is golden brown.
7. Allow to cool slightly before serving. Enjoy warm or at room temperature.
