Sweet Potato Pie
Ingredients:
- 1 deep dish pie crust
- 2 lbs. sweet potatoes*
- 6 Tbsp salted butter, melted & cooled
- 1/2 cup brown sugar
- 1/3 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 pinch salt
- 1/3 cup evaporated milk
- 2 large eggs
Directions:
1. Preheat oven to 350°F (175°C).
2. Boil or bake the sweet potatoes until tender. Once cooled, peel and mash them in a large mixing bowl.
3. Add melted butter, brown sugar, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until smooth.
4. Beat in the evaporated milk and eggs until the mixture is well combined.
5. Pour the sweet potato filling into the prepared deep dish pie crust.
6. Bake for 55-60 minutes, or until the filling is set and a knife inserted near the center comes out clean.
7. Let the pie cool completely before serving to allow the filling to firm up.

Tips:
Use a fork to prick the bottom of the pie crust before baking to prevent bubbling.
For extra flavor, add a splash of orange juice or zest to the sweet potato mixture.
