Cheesy Scalloped Potatoes

This creamy, cheesy dish is like a warm hug on a plate. Thin slices of potato bake in a rich garlic-cream sauce until golden and bubbling. It’s the perfect side to any meal or a cozy treat on its own.

Ingredients:
- 4 large russet potatoes, peeled and thinly sliced
- 1 medium onion, thinly sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 ½ cups milk
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 cups shredded sharp cheddar cheese, divided
- Chopped fresh parsley for garnish (optional)

Instructions:
1. Preheat oven to 375°F.
2. In a saucepan, melt butter over medium heat. Add garlic and cook 1 minute until fragrant.
3. Sprinkle flour into the pan and stir constantly for another minute to form a roux.
4. Gradually whisk in milk and cream. Cook, stirring, until sauce thickens.
5. Season with salt and pepper. Remove from heat and stir in 1 cup of cheese until smooth.
6. Grease a baking dish. Layer half the potatoes and onions, then pour half the cheese sauce over.
7. Repeat with remaining potatoes, onions and sauce.
8. Sprinkle the rest of the cheese on top.
9. Cover with foil and bake 30 minutes. Remove foil and bake 15 more minutes until golden and bubbly.
10. Let rest 5 minutes, garnish with parsley if you like, then serve warm.
