Delicious Blueberry Cheesecake Dream

Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup melted butter
2 cups fresh blueberries
3/4 cup sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
Directions:
Preheat your oven to 325°F (163°C).
In a medium-sized bowl, combine graham cracker crumbs and melted butter. Stir until well combined and press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.
In a small saucepan, combine the blueberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens and the blueberries burst, about 5-7 minutes. Remove from heat and let it cool.
In a large mixing bowl, beat cream cheese until smooth. Add in sugar, eggs, vanilla extract, and sour cream. Mix until well combined.
Pour the cream cheese mixture into the cooled crust, smoothing the top with a spatula.
Spoon the blueberry mixture over the cheesecake filling, spreading it evenly.
Bake the cheesecake for 55-60 minutes, or until the center is set. Let it cool to room temperature before refrigerating for at least 4 hours or overnight.
Once chilled, remove the cheesecake from the springform pan and transfer to a serving plate. Serve chilled, garnished with fresh blueberries if desired.
