Cheesy Beef Rolls
Ingredients:
For the Beef Filling:
1 lb (450g) ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional, for heat)
1 tablespoon olive oil
For the Cheese:
2 cups shredded cheese (such as Cheddar, Monterey Jack, or a blend)
1/4 cup chopped fresh cilantro (optional, for extra flavor)
For the Wraps:
8 large flour tortillas (or large lettuce leaves for a low-carb option)
For Serving:
Salsa or guacamole (optional)
Sour cream (optional)
Lettuce, tomato, and onion (optional)
Instructions:
Prepare the Beef Filling:
In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and cook for another 1 minute until fragrant.
Add the ground beef to the skillet and cook until browned, breaking it up into small pieces as it cooks.
Season the beef with salt, black pepper, dried oregano, dried basil, and red pepper flakes (if using). Cook until the beef is fully cooked through and the flavors are well combined. Remove from heat and let cool slightly.
Prepare the Cheese Mixture:
In a bowl, combine the shredded cheese and chopped cilantro (if using). Mix well.
Assemble the Rolls:
Lay out the flour tortillas on a clean surface. If using lettuce wraps, prepare the large lettuce leaves.
Spoon a portion of the cooled beef filling onto each tortilla, leaving a small border around the edges.
Sprinkle a generous amount of the cheese mixture over the beef filling.
Add any additional toppings like lettuce, tomato, and onion if desired.
Roll up the tortillas tightly, tucking in the sides as you roll to enclose the filling completely.
