Hot Honey Halloumi and Avocado Tacos
These vibrant Hot Honey Halloumi Tacos are a perfect blend of sweet, spicy, and savory flavors, with crispy halloumi coated in hot honey, and fresh toppings like avocado, arugula, and mint yogurt. Inspired by Mediterranean and Middle Eastern flavors, these tacos offer a delicious vegetarian option that’s quick and satisfying for any occasion.
Halloumi – 250g
Mini tortillas – 8
Avocados – 2
Arugula (rocket) – 60g
Pomegranate seeds – 50g
Harissa – 1 heaped tsp
Honey – 2 tbsp
Red pepper flakes – 1 tsp
Greek yogurt – ¼ cup (60ml)
Mint – 10g, chopped
Directions:
1. Slice each avocado, scoop out the flesh, and mash it.
2. Mix Greek yogurt and chopped mint to make the mint yogurt.
3. Slice the halloumi into thick strips.
4. In a bowl, mix harissa, honey, and red pepper flakes. Coat halloumi in the mixture.
5. Fry the halloumi over medium heat for 3-4 minutes on each side until caramelized.
6. Toast the tortillas in a dry pan or microwave.
7. Assemble tacos by adding mashed avocado, arugula, halloumi, mint yogurt, and pomegranate seeds.
