Garlic Parmesan Chicken with Spinach Pasta
Creamy Garlic Parmesan Chicken Tossed with Spinach Penne
Ingredients:
2 boneless, skinless chicken breasts, cut into strips
1 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon dried Italian herbs
1/2 teaspoon smoked paprika
Salt and pepper to taste
2 cups fresh spinach, roughly chopped
1/2 cup grated Parmesan cheese
1 cup milk (or dairy-free alternative)
2 tablespoons butter
8 oz penne pasta
2 tablespoons fresh parsley, chopped (for garnish)
Directions:
Cook penne pasta in salted boiling water according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chicken strips, season with salt, pepper, paprika, and Italian herbs. Cook until golden and cooked through (about 5–6 minutes). Remove from skillet and set aside.
In the same skillet, melt butter over medium heat. Add garlic and sauté for about 1 minute, until fragrant.
Pour in the milk and bring to a gentle simmer. Stir in Parmesan cheese and whisk until smooth and creamy.
Add spinach and cook for 1–2 minutes, until wilted.
Return the chicken to the pan and stir to coat with the sauce.
Add cooked penne and toss everything together until well combined. Let simmer for another minute to absorb flavors.
Serve hot, garnished with chopped parsley and an extra sprinkle of Parmesan if desired.
