Golden Fried Cod in Light Crispy Batter
Ingredients:
4 fresh cod fillets (or any firm white fish)
1 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1 cup cold sparkling water (or club soda)
Vegetable oil, for deep frying
Lemon wedges and tartar sauce, for serving
Directions:
Pat the fish fillets dry with paper towels to remove any moisture. Set aside.
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, and paprika until combined.
Slowly pour in the cold sparkling water, whisking continuously until a smooth batter forms. The consistency should be thick enough to coat the back of a spoon.
Heat vegetable oil in a deep fryer or deep skillet to 350°F (175°C).
Dip each fillet into the batter, allowing any excess to drip off, then gently lower into the hot oil.
Fry in batches for 5–6 minutes, turning once, until the fish is golden brown and crispy.
Remove and drain on a wire rack or paper towels.
Serve hot with lemon wedges and tartar sauce on the side.
