Honey Glazed Salmon with Garlic Spinach Pasta
Golden Honey-Glazed Salmon over Garlic Infused Spinach Penne
Ingredients:
2 salmon fillets (6 oz each)
1 1/2 tablespoons honey
1 tablespoon soy sauce (low sodium)
1 tablespoon olive oil
2 cloves garlic, minced
1/2 teaspoon chili flakes (optional)
8 oz penne pasta
1 tablespoon butter
2 more cloves garlic, minced
2 cups fresh spinach
1/3 cup grated Parmesan cheese
Salt and pepper to taste
Directions:
In a small bowl, whisk together honey, soy sauce, 1 tablespoon olive oil, 2 cloves minced garlic, and chili flakes if using.
Place salmon in a shallow dish, pour the glaze over the fillets, and let marinate for 10–15 minutes.
Preheat a non-stick skillet over medium heat. Cook the salmon skin-side down for 4–5 minutes. Flip and cook for another 3–4 minutes or until cooked through. Baste with the remaining glaze.
Cook pasta according to package instructions. Drain and set aside.
In a large pan, melt butter and sauté the remaining 2 cloves garlic over medium heat for 1–2 minutes.
Add spinach and cook until wilted. Toss in the cooked pasta, Parmesan, salt, and pepper. Mix until creamy and well-coated.
Serve the honey-glazed salmon over a bed of garlic spinach pasta. Garnish with fresh herbs or lemon zest if desired.
