Amazing Chickpea Flour Omelet: Vegan, Gluten-Free Egg Alternative ✨🍳🌱
ingredients:
¾ cup (90g) chickpea flour (besan/gram flour)
1 cup (240ml) water or unsweetened plant-based milk
2 tbsp nutritional yeast
½ tsp baking powder
½ tsp salt (or kala namak/black salt for eggy flavor)
¼ tsp ground turmeric (for color)
¼ tsp garlic powder
¼ tsp black pepper
Optional fillings: finely chopped onion, bell peppers, mushrooms, spinach, vegan cheese shreds, chopped herbs
Olive oil or vegan butter for cooking
directions:
1. In a medium bowl, whisk together the chickpea flour, water/plant milk, nutritional yeast, baking powder, salt/kala namak, turmeric, garlic powder, and black pepper until completely smooth and lump-free.
2. Let the batter rest for at least 10 minutes. This allows the flour to hydrate properly.
3. While the batter rests, prepare your desired fillings by sautéing any raw vegetables (like onions, peppers, mushrooms) in a separate small pan until tender. Set aside.
4. Heat a lightly oiled 8-10 inch non-stick skillet over medium heat.
5. Once the skillet is hot, give the batter a final stir and pour about half of it (or enough to thinly coat the bottom) into the skillet, swirling to create an even layer like a large pancake or omelet.
6. Cook for 4-6 minutes, undisturbed, until the edges look set and dry, and the surface appears mostly cooked (it might still look slightly wet in the very center).
7. Sprinkle your cooked fillings and any vegan cheese or fresh spinach/herbs over one half of the omelet.
8. Carefully, using a spatula, fold the other half of the omelet over the fillings.
9. Cook for another 1-2 minutes, pressing down gently, until heated through and any vegan cheese is melted.
10. Slide the omelet onto a plate. Repeat with the remaining batter if making a second omelet. Serve immediately.
