Savory Glazed Sausage and Potatoes

Ingredients:
1 lb (450 g) smoked sausages (such as kielbasa, andouille, or bratwurst)
2 lbs (900 g) baby potatoes, halved
2 tbsp olive oil
1 large onion, thinly sliced
2 cloves garlic, minced
1 cup chicken broth
1/2 cup apple cider vinegar
2 tbsp Dijon mustard
2 tbsp honey
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper, to taste
Chopped fresh parsley (for garnish)
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Sausages and Potatoes:
In a large bowl, toss the halved baby potatoes with olive oil, dried thyme, dried rosemary, salt, and pepper. Arrange the potatoes in a single layer on a large baking sheet.
Roast the Potatoes:
Roast the potatoes in the preheated oven for 20 minutes, flipping them halfway through to ensure even browning.
Prepare the Glaze:
While the potatoes are roasting, in a small saucepan, combine the chicken broth, apple cider vinegar, Dijon mustard, honey, and minced garlic. Bring to a simmer over medium heat and cook for about 5 minutes until slightly thickened.
