Easy Chickpea Salad for Wraps - Totally Vegan! 👍😋

ingredients:
1 can (15 ounces / 425g) chickpeas, rinsed and drained well
1/4 cup (60g) vegan mayonnaise (adjust to consistency)
2 tablespoons finely chopped celery
2 tablespoons finely chopped red onion
1 tablespoon sweet relish (optional)
1 teaspoon Dijon mustard
1 teaspoon fresh lemon juice
Salt and black pepper to taste
4-6 whole wheat or gluten-free tortillas or large lettuce leaves
Optional additions: lettuce leaves, tomato slices, cucumber, sprouts

directions:
1. Prepare chickpeas: Place the well-drained chickpeas in a medium bowl. Mash them with a fork or potato masher until mostly broken down but still with some texture.
2. Add ingredients: Add the vegan mayonnaise, chopped celery, chopped red onion, sweet relish (if using), Dijon mustard, and fresh lemon juice to the bowl with the mashed chickpeas.
3. Mix salad: Stir everything together until well combined and the mixture is creamy. Season with salt and black pepper to taste.
4. Prepare wraps: Lay out your tortillas or large lettuce leaves.
5. Fill wraps: Place lettuce leaves and tomato slices (if using) on the tortilla/lettuce base. Spoon a generous amount of the chickpea salad onto the center. Add other desired fillings like cucumber or sprouts.
