🍌 Banana Bread Cake 🍰
A moist and tender cake with all the comforting flavors of classic banana bread, perfect for breakfast or dessert!
Ingredients:
Dry Ingredients:
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
Wet Ingredients:
3/4 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup mashed ripe bananas (about 2 medium bananas)
1/2 cup buttermilk
Optional:
1/2 cup chopped walnuts (or pecans)
Powdered sugar for dusting
Instructions:
Preheat & Prepare:
Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper.
Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
Cream Butter and Sugar:
In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 2-3 minutes).
Add Eggs & Bananas:
Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas until well combined.
Combine Mixtures:
Alternately add the dry ingredients and buttermilk to the banana mixture, stirring gently until just combined. If using, fold in chopped walnuts.
Bake:
Pour the batter into the prepared pan and smooth out the top. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Serve:
