Crispy Trout with Lemon Garlic Butter Pasta
Ingredients:

2 trout fillets
8 oz spaghetti pasta
2 tbsp olive oil
4 cloves garlic, minced
1/4 cup unsalted butter
1 lemon, zest and juice
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
1/2 tsp crushed red pepper flakes (optional)
Directions:

Cook the spaghetti pasta according to package instructions. Drain and set aside, reserving 1/4 cup of pasta water.
In a large skillet, heat olive oil over medium-high heat. Season the trout fillets with salt and pepper. Once the pan is hot, place the trout fillets skin-side down and cook for 3-4 minutes on each side until golden brown and crispy. Remove the fillets from the skillet and set aside.
In the same skillet, reduce the heat to medium. Add the garlic and sauté for 1-2 minutes until fragrant.
Add the butter to the skillet and allow it to melt. Stir in the lemon zest and lemon juice, then season with salt, pepper, and red pepper flakes (if using).
Toss the cooked pasta in the skillet with the lemon garlic butter sauce. If the sauce is too thick, add a bit of the reserved pasta water to loosen it up.
Plate the pasta and top with the crispy trout fillets. Garnish with fresh parsley and serve.
