Classic Diane Sauce ππ₯©
This Diane Sauce is a luxurious, creamy sauce packed with rich flavours from mushrooms, Dijon mustard, and a hint of brandy. Itβs the perfect accompaniment to a beautifully cooked steak or other grilled meats for a restaurant-quality meal at home.
Ingredients:
π§ Garlic: 1 clove, minced
π Mushrooms: 150g, sliced (button or cremini work well)
π§ Unsalted butter: 1 tbsp
π§ Olive oil: 1 tbsp
πΈ Brandy (or white wine): 50ml (optional for non-alcoholic, use vegetable stock)
π§ Dijon mustard: 1 tsp
π₯ Worcestershire sauce: 1 tbsp
πΆ Beef stock: 150ml
π Double cream: 100ml
πΏ Fresh parsley: a small handful, chopped (for garnish)
π§ Salt & pepper: to taste
Method:
π§ SautΓ© the mushrooms: In a large frying pan, heat the butter and olive oil over medium heat. Add the minced garlic and sliced mushrooms and cook for 4-5 minutes, until the mushrooms are softened and golden.
πΈ Add the brandy: Carefully pour in the brandy (or wine). Allow it to cook for 2-3 minutes, allowing the alcohol to evaporate, leaving a rich flavour behind.
πΆ Stir in the stock and mustard: Add the beef stock and Dijon mustard to the pan. Stir to combine and bring the sauce to a simmer. Let it cook for 5-7 minutes, allowing the sauce to reduce slightly and thicken.
π₯ Finish with cream: Stir in the double cream and Worcestershire sauce. Simmer for another 3-4 minutes until the sauce becomes creamy and velvety. Season with salt and pepper to taste.
π½ Serve: Once the sauce is thickened to your liking, pour it over your cooked steaks, grilled meats, or roasted vegetables. Garnish with fresh parsley for a lovely finish.
