Armenian-Style Potato Salad
Ingredients
6 medium potatoes, peeled and diced
1 red onion, finely chopped
3 tbsp olive oil
2 tbsp red wine vinegar
1 tsp ground sumac
1/2 tsp ground cumin
1/4 cup chopped fresh parsley
Salt and pepper to taste
Instructions
Boil the potatoes in salted water until tender but still holding their shape. Drain and let cool slightly.
In a large bowl, whisk together olive oil, red wine vinegar, sumac, cumin, salt, and pepper to create the dressing.
Add the cooked potatoes, red onion, and parsley to the bowl. Gently toss to coat the potatoes in the dressing.
Refrigerate the salad overnight for the flavors to meld. Remove from the fridge about 45 minutes before serving to allow it to come to room temperature.
