Herb Crusted Cod with Tomato Basil Spaghetti
Mediterranean Herb-Encrusted Cod with Garden Fresh Tomato Basil Spaghetti
Ingredients:

4 cod fillets (about 6 oz each)
1/4 cup olive oil, divided
3 cloves garlic, minced
1 cup panko breadcrumbs
3 tablespoons fresh parsley, finely chopped
2 tablespoons fresh thyme, finely chopped
1 tablespoon fresh rosemary, finely chopped
Zest of 1 lemon
Salt and pepper to taste
12 oz spaghetti
3 tablespoons olive oil
4 cloves garlic, minced
1 lb cherry tomatoes, halved
1/4 cup fresh basil leaves, torn
1/4 teaspoon red pepper flakes (optional)
1/4 cup grated Parmesan cheese (optional)
2 tablespoons lemon juice

Directions:

Preheat oven to 400°F (200°C).
Pat the cod fillets dry with paper towels and season with salt and pepper on both sides.
In a small bowl, mix 2 tablespoons olive oil with 1 clove minced garlic.
In another bowl, combine panko breadcrumbs, chopped herbs, lemon zest, remaining minced garlic, salt, and pepper.
Brush the cod fillets with the garlic oil mixture, then press the herb breadcrumb mixture onto the top of each fillet.
Place the cod fillets on a parchment-lined baking sheet and drizzle with the remaining olive oil.
Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
While the fish is baking, cook the spaghetti according to package directions until al dente. Drain and set aside.
In a large skillet, heat 3 tablespoons olive oil over medium heat. Add 4 cloves minced garlic and cook for 30 seconds until fragrant.
Add the cherry tomatoes and cook for 3-4 minutes until they begin to soften and release their juices.
Add red pepper flakes (if using) and continue to cook for another 2 minutes.
Add the cooked spaghetti to the skillet and toss to combine with the tomato mixture.
Stir in torn basil leaves, lemon juice, and Parmesan cheese (if using). Season with salt and pepper to taste.
Serve each cod fillet on a bed of the tomato basil spaghetti, garnished with additional fresh basil.
