🍌 Cinnamon Roll Banana Bread 🍠
Ingredients:
For the Banana Bread Dough:
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 large ripe bananas, mashed
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
2 large eggs
For the Cinnamon Filling:
1/2 cup brown sugar, firmly packed
1 tablespoon ground cinnamon
2 tablespoons unsalted butter, melted
For the Glaze:
1 cup powdered sugar
2–3 tablespoons milk
1/2 teaspoon vanilla extract
Instructions:
Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
Make the Banana Bread Dough: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside. In a separate large bowl, combine the mashed bananas, melted butter, sugar, and eggs. Mix until smooth. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix.
Prepare the Cinnamon Filling: In a small bowl, mix together the brown sugar and cinnamon. Set aside.
Assemble the Rolls: Pour half of the banana bread batter into the prepared loaf pan. Sprinkle the cinnamon-sugar mixture evenly over the batter. Drizzle the melted butter on top of the cinnamon layer. Cover with the remaining banana bread batter, spreading it gently to avoid disturbing the filling.
Bake the Bread: Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Make the Glaze: In a small mixing bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to achieve your desired consistency.
Drizzle and Serve: Once the bread has cooled, slice it into thick pieces and drizzle each slice generously with the glaze. Serve immediately or store in an airtight container for up to 3 days.
