Chicken Breast in Creamy Mushroom Sauce
Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1/2 cup onion, chopped
2 cups mushrooms, sliced
2 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 tsp thyme (fresh or dried)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Preparation:
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook for 6-7 minutes per side until golden and cooked through. Remove from skillet and set aside.
In the same skillet, sauté onions and garlic until softened, about 3 minutes. Add mushrooms and cook until tender, about 5 minutes.
Pour in the chicken broth and thyme, scraping up any browned bits from the skillet. Stir in the heavy cream and simmer for 3-4 minutes until the sauce thickens.
Return the chicken to the skillet, coating it in the creamy sauce. Simmer for another 2-3 minutes to warm through.
Garnish with fresh parsley and serve. Enjoy your creamy, flavorful chicken!
