Amish Apple Fritter Bread
Ingredients:
1/2 cup unsalted butter, softened
2/3 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
2 cups diced apples
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup brown sugar
Directions:
Start by preheating your oven to 350°F (175°C) and grease a loaf pan. In a large bowl, cream together the softened butter and granulated sugar until it's light and fluffy. Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract. In a separate bowl, mix the flour, baking powder, cinnamon, and nutmeg. Gradually combine the dry ingredients with the wet mixture, mixing until just combined. Fold in the diced apples and brown sugar. Pour the batter into your prepared loaf pan. Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
