Country Ranch Green Beans 'n Potatoes with Bacon

Ingredients:

1 pound bacon, diced
2 pounds small red potatoes, halved or quartered if large
1 pound fresh green beans, trimmed
1 medium yellow onion, chopped
2 cloves garlic, minced
1/2 cup country ranch dressing
1/4 cup chicken broth
2 tablespoons butter
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions:

1. In a large skillet or Dutch oven, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon, reserving bacon grease in the skillet. Set bacon aside.
2. Add butter to the skillet with the bacon grease. Melt the butter. Add potatoes and onion to the skillet and cook, stirring occasionally, until potatoes are tender and slightly browned, about 15-20 minutes.
3. Stir in garlic and thyme; cook for 1 minute more.
4. Add green beans and chicken broth to the skillet. Bring to a simmer, cover, and cook until green beans are tender-crisp, about 5-7 minutes.
5. Stir in ranch dressing, salt, and pepper. Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
6. Stir in the cooked bacon.
7. Serve immediately.
