Avocado Toast with Asparagus, Smoked Salmon, and Eggs 🥑🐟🍳

A fresh, flavorful toast loaded with creamy avocado, smoky salmon, eggs, and crisp asparagus—perfect for any time of day!

Ingredients
For the Toast:
2 slices whole-grain or seeded bread, toasted
1 ripe avocado, mashed
Fresh lemon juice, to taste
Salt & black pepper, to taste
For the Toppings:
6 asparagus spears, trimmed
2 eggs, cooked to your liking (soft or hard-boiled), sliced
3 oz smoked salmon, thinly sliced
4 cherry tomatoes, halved
2 tbsp red onion, thinly sliced
Fresh dill, for garnish
Black sesame seeds or everything bagel seasoning (optional)

Instructions
Cook the Asparagus – Heat a skillet with olive oil over medium heat. Sauté asparagus for 3–4 minutes until tender-crisp. Season lightly with salt.
Boil the Eggs – Bring water to a gentle boil. Cook eggs for 6–7 minutes for soft-boiled or 9–10 minutes for hard-boiled. Transfer to cold water, peel, and slice.
Make the Avocado Spread – Mash avocado with lemon juice, salt, and pepper until smooth.
Assemble the Toast – Spread avocado over toasted bread. Layer with asparagus, smoked salmon, cherry tomatoes, and sliced eggs.
Finish & Serve – Top with red onion, fresh dill, and a sprinkle of sesame seeds or seasoning. Serve immediately!
