🍝 Italian Drunken Noodles 🍝

Ingredients:
For the Sauce:
2 tablespoons olive oil
1 lb Italian sausage (mild or spicy)
1 small onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cloves garlic, minced
1 teaspoon red pepper flakes (optional)
Β½ cup white wine
1 (14.5 oz) can diced tomatoes, drained
Β½ teaspoon Italian seasoning
Salt & pepper to taste
ΒΌ cup fresh basil, chopped
For the Noodles:
12 oz pappardelle pasta (or wide egg noodles)
2 tablespoons butter
Β½ cup Parmesan cheese, grated

Directions:
1. Cook the Pasta
Bring a large pot of salted water to a boil and cook pappardelle according to package directions until al dente.
Drain, toss with butter, and set aside.
2. Make the Sauce
In a large skillet, heat olive oil over medium-high heat.
Add Italian sausage, breaking it into crumbles, and cook until browned.
Remove sausage and set aside.
In the same skillet, sautΓ© onions and bell peppers for 3-4 minutes until softened.
Add garlic and red pepper flakes, cooking for 1 minute.
Pour in white wine, scraping up any browned bits.
Stir in diced tomatoes, Italian seasoning, salt, and pepper.
Return the sausage to the skillet and let simmer for 5-7 minutes.
3. Combine & Serve
Toss the cooked pasta into the sauce, coating evenly.
Stir in fresh basil and Parmesan cheese.
Serve hot with extra cheese on top.
