Creamy Velveeta Beef & Rotini Pasta
Ingredients:
1 large block of Velveeta cheese, cubed
1 (8 oz) block of cream cheese, softened
1 can cream of chicken soup
1 can Rotel tomatoes with chilies, undrained
2.25 pounds ground beef
1 package rotini pasta
Optional: 1 cup pasta water, reserved to thin the sauce
Directions:
Cook the Pasta:
Boil the rotini pasta according to the package instructions. Drain and reserve 1 cup of pasta water; set aside.
Cook the Ground Beef:
In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Drain any excess fat.
Make the Sauce:
Stir in the cream of chicken soup, Rotel tomatoes (with juice), cream cheese, and Velveeta cheese. Stir continuously until the cheese is melted and the sauce is smooth and creamy.
If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.
Combine with Pasta:
Add the cooked rotini to the skillet, tossing to coat the pasta evenly in the creamy sauce.
Serve:
