Creamy Spinach & Mushroom Lasagna

Ingredients:
- 9 lasagna noodles
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 8 oz cremini mushrooms, sliced
- 5 cups baby spinach
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 2 cups marinara sauce
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 375°F.
2. Cook the lasagna noodles according to package instructions, then drain and set aside.
3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, cooking until fragrant.
4. Add the mushrooms and cook until they release their moisture. Add the spinach and cook until wilted.
5. In a bowl, mix together the ricotta, Parmesan, and half of the mozzarella.
6. In a 9x13 inch baking dish, spread a thin layer of marinara sauce. Layer with 3 lasagna noodles, half of the mushroom mixture, half of the cheese mixture, and more marinara sauce. Repeat with another layer of noodles, mushrooms, cheese, and marinara. Top with the remaining noodles, sauce, and mozzarella cheese.
7. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until bubbly and browned on top.
8. Let it cool for a few minutes before slicing and serving.
