Mexican White Trash Casserole

Ingredients:
- 1 pound ground beef
- 1 onion, diced
- 1 can corn, drained
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes
- 1 can diced green chilies
- 1 packet taco seasoning
- 1 cup shredded Mexican blend cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Tortilla chips
Instructions:
1. Preheat oven to 350°F.
2. In a large skillet, brown the ground beef with the diced onion until cooked through. Drain off any excess fat.
3. Add the corn, black beans, diced tomatoes, green chilies, and taco seasoning to the skillet. Stir to combine.
4. In a 9x13 inch baking dish, layer the bottom with tortilla chips.
5. Pour the beef mixture over the top of the tortilla chips.
6. Top with shredded cheese.
7. Bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
