Steak with Creamy Peppercorn Sauce and Roasted Potatoes 🍽️🥔
Ingredients:
- 2 ribeye or sirloin steaks
- 1 lb baby potatoes, quartered
- 2 tbsp olive oil (for both steak and potatoes)
- 2 tbsp unsalted butter (for steak and sauce)
- 1 tbsp whole black peppercorns, crushed
- 1/2 cup beef broth
- 1/2 cup heavy cream
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- Fresh rosemary, optional
Instructions:
1. Prepare the Roasted Potatoes:
- Preheat your oven to 400F (200C).
- In a mixing bowl, combine the quartered baby potatoes with 2 tbsp of olive oil, garlic powder, smoked paprika, salt, pepper, and fresh rosemary if using.
- Spread the seasoned potatoes onto a baking sheet in a single layer. Roast in the oven for 30-35 minutes, flipping them halfway through, until they are golden and crispy.
2. Cook the Steak:
- While the potatoes are roasting, heat 2 tbsp of olive oil in a large skillet over medium-high heat.
- Season both sides of the steaks with salt and black pepper.
- Once the skillet is hot, add the steaks and sear them for about 3-4 minutes per side, adjusting the cooking time based on your preferred level of doneness.
- Add 2 tbsp of unsalted butter to the skillet and use a spoon to baste the melted butter over the steaks as they finish cooking.
- Once done, remove the steaks from the heat and allow them to rest for about 5 minutes.
3. Make the Creamy Peppercorn Sauce:
- In the same skillet used for the steaks, melt 2 tbsp of unsalted butter over medium heat.
- Add the crushed black peppercorns and toast them for about 1 minute until fragrant.
- Carefully pour in the beef broth, scraping the bottom of the skillet to release any tasty browned bits.
- Stir in the heavy cream, Dijon mustard, and Worcestershire sauce. Let the mixture simmer gently for about 5 minutes, or until the sauce has thickened to your liking.
- Taste and season with salt as needed.
4. Assemble the Plate:
- Serve each steak alongside a generous portion of roasted potatoes.
- Drizzle the creamy peppercorn sauce over the steaks and garnish with fresh herbs for an elegant touch if desired.
