One-Pot Creamy Beef and Spinach Alfredo
Ingredients:
1 tbsp olive oil
1 lb ground beef
1 medium yellow onion, chopped
2 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
4 cups chicken broth
1 lb fettuccine pasta
1 cup heavy cream
4 cups fresh spinach, roughly chopped
1 cup grated Parmesan cheese, plus more for serving
Directions:
1. Get Started: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
2. Build the Flavor: Add the chopped onion and minced garlic to the pot. Cook until the onion is softened and translucent, about 3-5 minutes. Stir in the Italian seasoning, salt, and pepper.
3. One-Pot Magic: Pour in the chicken broth and bring to a boil. Add the fettuccine pasta to the pot, making sure it's submerged in the liquid. If needed, add a little more broth or water.
4. Simmer and Stir: Reduce the heat to medium-low, cover the pot, and simmer for 12-15 minutes, or until the pasta is cooked through and the liquid has been absorbed. Stir occasionally to prevent sticking.
5. Creamy Dreamy: Remove the pot from the heat. Stir in the heavy cream, fresh spinach, and Parmesan cheese. Stir until the cheese is melted and the sauce is smooth and creamy. The spinach will wilt quickly from the heat.
