Ingredients:
For the Cupcakes:
1 ¾ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
¾ cup brown sugar
¼ cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 tsp butter extract
½ cup buttermilk
½ cup cream soda
For the Butterbeer Frosting:
1 cup unsalted butter, softened
3 cups powdered sugar
2 tbsp butterscotch sauce
1 tsp vanilla extract
½ tsp butter extract
2 tbsp heavy cream
For Garnish:
Butterscotch drizzle
Gold sprinkles
Lightning bolt cupcake toppers (optional)
Instructions:
1️⃣ Preheat & Prep: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
2️⃣ Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3️⃣ Cream Butter & Sugars: In a separate bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
4️⃣ Add Eggs & Flavoring: Mix in eggs, vanilla extract, and butter extract until smooth.
5️⃣ Alternate Wet & Dry: Gradually add the dry ingredients, alternating with buttermilk and cream soda, mixing just until combined.
6️⃣ Bake: Divide batter evenly into liners and bake for 18–20 minutes or until a toothpick comes out clean. Let cool completely.
7️⃣ Make the Frosting: Beat butter, powdered sugar, butterscotch sauce, vanilla, and butter extract until fluffy. Add heavy cream and beat until smooth.
8️⃣ Decorate: Pipe frosting onto cooled cupcakes. Drizzle with butterscotch sauce and sprinkle with gold sprinkles. Add fun Harry Potter-themed toppers if desired.
