• 1 (14 oz) can of salmon, drained & flaked (or ~1½ cups cooked fresh salmon)
• 1 egg 🥚
• ¼ cup breadcrumbs (or almond flour for low-carb)
• 2 tbsp red onion, finely diced
• 1 clove garlic, minced
• 2 tbsp chopped fresh parsley 🌿
• 1 tbsp chopped fresh dill or mint (optional)
• Zest of ½ lemon + 1 tbsp juice 🍋
• Salt & pepper to taste
• Olive oil for pan-frying
