🐟 Creamy Baked Fish with Potatoes & Herbs 🍋🥔

🛒 Ingredients:
2 white fish fillets (e.g. cod, haddock or pollock) 🐟
300g baby potatoes, halved 🥔
1 tbsp olive oil 🛢
150ml heavy cream 🥛
1 garlic clove, minced 🧄
1 tsp Dijon mustard (optional)
1 tsp lemon juice 🍋
1 tsp fresh thyme or parsley, chopped 🌿
Salt & pepper to taste 🧂
👩🍳 Instructions:
Preheat oven to 200°C (390°F). Place halved baby potatoes in a baking dish, drizzle with olive oil, and season with salt and pepper. Bake for 15 minutes. Meanwhile, mix the cream, garlic, mustard, lemon juice, and herbs in a small bowl. Remove the dish, place the fish fillets over the potatoes, pour the cream mixture on top, and return to the oven. Bake for another 15–18 minutes, or until the fish is cooked through and the sauce is bubbling. Garnish with fresh herbs and serve hot!

Add a handful of spinach or cherry tomatoes before baking.
