Roasted Tomatoes with Burrata & Toasted Bread

250 g (1/2 lb) cherry tomatoes
2 tbsp olive oil (plus extra for drizzling)
1 garlic clove, minced
1 tsp balsamic vinegar
Salt and freshly ground black pepper, to taste
1 ball of fresh burrata cheese (about 125 g)
Fresh basil leaves, for garnish
4 slices of crusty bread
1 tbsp butter (for toasting bread)

Roast the tomatoes:
Preheat your oven to 200Β°C (400Β°F).
Place cherry tomatoes on a baking sheet. Drizzle with olive oil, sprinkle with minced garlic, balsamic vinegar, salt, and pepper. Toss to coat. Roast for 15β20 minutes until tomatoes are soft, slightly caramelized, and blistered.
Toast the bread:
While the tomatoes are roasting, heat butter in a skillet over medium heat. Toast the bread slices until golden and crisp on both sides. Alternatively, toast in an oven or toaster.
Assemble the dish:
Place the roasted tomatoes on a serving plate. Add the burrata in the center. Drizzle with extra olive oil and season with salt and pepper.
Garnish and serve:
Garnish with fresh basil leaves and serve with toasted bread on the side for dipping.
