Cherry Cheesecake Tacos

Ingredients:

8 small flour tortillas
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 cup unsalted butter, melted
8 ounces cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 (21-ounce) can cherry pie filling
Directions:

Preheat oven to 375°F (190°C).
Cut tortillas into circles using a 3-4 inch cookie cutter.
In a bowl, mix granulated sugar and cinnamon.
Brush both sides of tortilla circles with melted butter, then coat with the cinnamon-sugar mixture.
Drape each tortilla over the edge of an oven rack to form a taco shape. Bake for 7-9 minutes until golden brown. Let cool.
In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
Fill each taco shell with the cheesecake mixture and top with cherry pie filling.
Serve immediately or chill for a firmer texture.
