For the Lamb Chops:
8 lamb chops π
2 tbsp olive oil
2 cloves garlic, minced π§
1 tbsp fresh rosemary, chopped πΏ
1 tbsp fresh parsley, chopped
1 tsp fresh thyme, chopped
Salt and pepper to taste
For Garnish:
1 orange, halved π
Fresh arugula leaves π₯
Extra parsley, chopped π±

Marinate the Lamb: In a bowl, combine olive oil, garlic, rosemary, parsley, thyme, salt, and pepper. Rub the mixture over the lamb chops, ensuring theyβre well-coated. Let them marinate for 30 minutes at room temperature. π
Preheat the Grill: Heat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking. π₯
Grill the Lamb: Place the lamb chops on the grill and cook for 3-4 minutes per side for medium-rare, or longer if desired (internal temp of 145Β°F/63Β°C). In the last minute, add the orange halves to the grill, cut side down, and grill until caramelized. π
