EaSTER SUGAR COOKIE CUPS

You Will Need (Cookie Cups):
1/2 cup unsalted butter (softened)
1/2 cup granulated sugar
1 egg
1 tsp vanilla extract
1½ cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt

Filling:
4 oz cream cheese (softened)
1/4 cup powdered sugar
1/2 tsp vanilla extract
Food coloring (optional pastel tones)

Topping:
Mini chocolate eggs or Easter sprinkles

Instructions:

1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin pan.

2. Cream together butter and sugar until fluffy. Add egg and vanilla.

3. Mix in flour, baking powder, and salt.

4. Roll dough into small balls and press into mini muffin cups to form a "cup" shape.

5. Bake for 10–12 minutes or until golden. Let cool completely.

6. For the filling, beat cream cheese, powdered sugar, and vanilla until smooth.

7. Pipe or spoon filling into cookie cups.

8. Top with mini eggs or festive sprinkles.
