I made a version of cottage cheese cookies that I saw on tik tok. They are the best chocolate chip cookies l've made so far! 2 cups cottage cheese and 2 tsp vanilla blended in a food processor until creamy. Then add mixture to 2 cups almond flour, 2 scoops of vanilla protien powder (I use isopure),
1/2 cup of swerve brown sugar, and 1 cup chocolate chips (I use believe). Mix well then bake at 350 for 15 mins. I got 24 cookies at 2 carbs each!
*the recipe did call for 1/2 cup maple syrup blended with the cottage cheese, but I didn't have a keto version so I didnt do that step, so they are not as sweet as they probably could be.
