Mexican Cornbread – Pass or Smash?
Ingredients:
1 cup all-purpose flour
1 cup white cornmeal
1 egg
1/2 cup oil
1 cup buttermilk
1 can Mexi-corn (drained)
1 medium onion, diced
1 medium green pepper, diced
1 cup shredded cheese
1/2 tsp red pepper
Instructions:
Preheat Oven: Heat oven to 400°F (200°C). Melt 1 tsp Crisco in a cast iron skillet and set aside.
Mix Batter: In a bowl, combine flour, cornmeal, egg, oil, buttermilk, Mexi-corn, onion, green pepper, cheese, and red pepper. Stir until just combined.
Bake: Pour batter into the hot skillet. Bake for 30-35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
Serve: Let cool slightly before slicing and serving.
