1 cup buttermilk
½ cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 tbsp instant coffee granules dissolved in 2 tbsp hot water
1 cup chocolate chips
½ cup caramel sauce (store-bought or homemade)
Directions
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In another bowl, whisk the buttermilk, oil, eggs, vanilla, and dissolved coffee until smooth.
Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chocolate chips.
Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick comes out clean.
