Cheesy Chicken Fritters with Garlic Aioli Dip

Ingredients:

For Chicken Fritters:

1 1/2 lbs chicken breasts (about 3 large breasts)
2 large eggs
1/3 cup mayonnaise
1/3 cup all-purpose flour (or cornstarch or potato starch for gluten-free option)
4 oz mozzarella cheese, shredded (about 1 1/3 cups)
1 1/2 Tbsp chopped fresh dill
1/2 tsp salt (or to taste)
1/8 tsp black pepper
2 Tbsp extra light olive oil (or any high-heat cooking oil) for sautéing
For Garlic Aioli Dip (Optional):

1/3 cup mayonnaise
1 garlic clove, pressed
1/2 Tbsp lemon juice
1/4 tsp salt
1/8 tsp black pepper
Directions:

Prepare the Chicken Fritters:

Using a sharp knife, dice the chicken breasts into 1/3″ thick pieces. Tip: If the chicken breast is partially frozen, it will be easier to slice.
Place the diced chicken into a large mixing bowl. Add the eggs, mayonnaise, flour (or starch), shredded mozzarella, chopped dill, salt, and black pepper. Stir the mixture until everything is well combined.
Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours or overnight for best results.
Cook the Fritters:

Heat a large non-stick pan over medium heat and add 2 Tbsp of oil. Once the oil is hot, drop the chicken mixture into the pan using a heaping tablespoon.
Slightly flatten the tops of the fritters with the back of a spoon. Sauté the fritters uncovered for 3-4 minutes on the first side, then flip and sauté for another 3 minutes on the second side, or until the fritters are golden brown and the chicken is fully cooked through.
Repeat with the remaining chicken mixture, adding more oil as needed.
Note: To ensure the fritters are cooked through, cut one in half. The chicken should be completely white inside. If the fritters brown too quickly, reduce the heat.
Make the Garlic Aioli Dip (Optional):

In a small bowl, combine the mayonnaise, pressed garlic, lemon juice, salt, and black pepper.
Stir the mixture until smooth and well combined.
Serve the chicken fritters hot with the garlic aioli dip on the side. Enjoy!
