Herb-Infused Mediterranean Chicken Gyro
Ingredients:
For the chicken marinade:
1 ½ lbs boneless, skinless chicken thighs
3 tablespoons olive oil
Juice of 1 lemon
3 cloves garlic, minced
1 tablespoon red wine vinegar
2 teaspoons dried oregano
1 teaspoon thyme
1 teaspoon rosemary
Salt and pepper, to taste
For assembling the gyros:
4–6 warm pita or flatbreads
1 cup tzatziki sauce
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup thinly sliced red onion
1/4 cup crumbled feta cheese (optional)
Directions:
In a bowl, mix olive oil, lemon juice, garlic, red wine vinegar, oregano, thyme, rosemary, salt, and pepper. Add chicken and marinate for at least 1 hour (or overnight for best flavor).
Preheat grill or skillet over medium-high heat. Cook chicken for 5–6 minutes per side, or until fully cooked and nicely charred. Let rest, then slice thinly.
Warm pita bread on a pan or in the oven.
Spread a generous spoonful of tzatziki sauce on each pita.
Add sliced chicken, lettuce, tomatoes, onions, and feta. Fold and serve immediately.
