Deeply Savory Alcohol-Free Mushroom Stew Perfect for Cozy Dinners ✨🍲😋
Ingredients:
2 tablespoons (30ml) olive oil
1.5 lbs (680g) mixed mushrooms (cremini, shiitake, oyster), cleaned & thickly sliced or quartered
1 large yellow onion, chopped
2 large carrots, peeled and cut into chunks
2 celery stalks, cut into chunks
4 cloves garlic, minced
1/4 cup (30g) all-purpose flour (or GF blend)
4 cups (950ml) low-sodium vegetable broth
1 cup (240ml) unsweetened grape or cranberry juice (for depth)
2 tablespoons (30ml) tomato paste
1 tablespoon (15ml) balsamic vinegar
1 tablespoon (15ml) tamari or soy sauce (low sodium)
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
Salt and freshly ground black pepper
1 cup (150g) small potatoes, halved or quartered (optional, added during simmering)
1 cup (140g) frozen pearl onions
Optional Garnish: Fresh parsley, chopped
Serve with: Mashed potatoes, crusty bread, or noodles
Directions:
1. Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Brown mushrooms in batches until deeply colored; set aside.
2. Add onion, carrots, and celery to the pot. Sauté until softened and lightly browned (8-10 mins). Add garlic, cook 1 min more.
3. Sprinkle flour over vegetables, stir and cook for 1-2 minutes.
4. Gradually whisk in broth and juice. Stir in tomato paste, balsamic vinegar, tamari/soy sauce, thyme, rosemary, and bay leaves. Bring to a simmer.
5. Return mushrooms to the pot. If adding potatoes directly to the stew, add them now. Season with salt and pepper.
6. Reduce heat to low, cover, and simmer gently for 45-60 minutes, or until vegetables (and potatoes, if using) are tender and sauce has thickened. Stir occasionally.
7. Add frozen pearl onions during the last 15 minutes of cooking.
8. Remove bay leaves. Taste and adjust seasoning.
9. Garnish with fresh parsley and serve hot, ideally alongside or over creamy mashed potatoes.
